Ingredients

  • 225 gm softened butter
  • 140 gm caster sugar
  • 1 egg yolk, lightly beaten
  • 2 tsp vanilla essence
  • 280 gm plain flour
  • 40 gm coconut
  • 60 gm cranberries
  • pinch salt

Method

  1. Preheat oven to 175 degrees. Put the butter and sugar into a bowl, mix well and beat in egg yolk and vanilla extract.
  2. Sift together the flour and pinch of salt into the mixture, add the coconut and cranberries and stir until thoroughly combined.
  3. Scoop up tablespoons of the dough and place onto baking tray , spaced well apart.
  4. .Bake for 12-15 mins or until golden brown. Leave to cool for 5-10mins, then transfer to wire racks to cool completely.

  • I love cranberries and these Cranberry cookies look delicious. Must give this recipe a try.
