This lobster salad is a lovely refreshing meal or side salad for Spring or Summer!


Ingredients (serves 6 | makes 6 individual salads (as pictured))

  • 6 crayfish/lobster
  • 100 mls lime juice
  • 150 grams butter (cubed)
  • 1.5 teaspoons chopped chives

Method

  1. Cut down underside of tail to remove lobster meat from shell. You can either cut it in half ,and leave whole, or slice into medallions.
  2. Place lime juice in small saucepan and bring slowly to the boil over low heat.
  3. Using a wire whisk add butter cube by cube until all are melted.
  4. Add chives and combine well.
  5. Taste and season with salt and pepper.
  6. Arrange salad ingredients of choice on plate and add lobster.
  7. Drizzle with lime butter and serve immediately.

Notes

This is a quick and easy recipe that tastes so great the whole family will love it! I've even served it at dinner parties and it's always a hit! You can slice the lobster into medallions for a more sophisticated look!

  • This assumes you have bought a cooked crayfish/lobster. Try starting from scratch and the crayfish/lobster will be so much better if you cook it yourself.
