Creamy potato soup with no added dairy. Great for toddler food. My 2 year old loves it.


Ingredients (serves 5)

  • 6 Potatoes cut in cubes
  • 2 cubes Vegetable stock
  • Half cup Rice milk (or any milk you would like to use)
  • Add to taste Salt, Pepper, Parsley
  • flakes Chilli
  • 1 onion
  • half clove of garlic or diced garlic

Method

  1. In a big pot put your chopped onions and peeled and chopped potatoes in.
  2. Add the vegetable stock, a jug of boiling water. Add garlic and spices.
  3. When potatoes are soft remove from heat and blend until creamy. Add milk while blending. Sprinkle chilli on top for a yummy taste.

Notes

Great for those fussy toddler eaters.

  • Yummo, so creamy yet NO cream or milk added! Also a great recipe to add hidden veggies if you blend it all. Also nice with bacon bones, lovely smokey flavour

  • If you have a fussy eater I doubt you would get a child to eat this.
    Onion and Garlic – they are similar so why add both.
    Vegetable Stock has salt in it, do you really need to add more salt? That could be the cause of a few medical problems not only for young children but adults too. Children can get high blood pressure, strokes (I know a toddler who has had 2 strokes) or heart attacks too
