This gorgeous Easter bunny cookie recipe is lots of fun to make with the kids:

Ingredients:

250gms unsalted butter, softened
1 1/2 cups caster sugar
1 egg1 1/2 teaspoons vanilla essense
2 3/4 cups plain flour
1 teaspoon baking powder
1 teaspoon salt

Method:

Step 1
Using an electric mixer, beat butter and sugar until light and fluffy. Beat in egg and vanilla essence. Use a wooden spoon to stir in flour, baking powder and salt. Divide dough into 2 balls.

Step 2
Turn dough out onto a lightly floured surface. Preheat oven to 160°C. Line 2 baking trays with non-stick baking paper. Roll dough out between 2 sheets of baking paper to 5mm thick.

Step 3
Cut out shapes and place onto lined tray. Repeat until all dough is used.

Step 4
Bake biscuits for 8-10 minutes, or until golden and cooked through. Transfer to a wire rack to cool.

Step 5
Add ribbon to decorate.

You can also pop them into treat bags and give them as gifts, we used our chevron pastels treat bags with happy Easter tags.
