Ingredients (serves 4)

  • 300 grams Dark Chocolate
  • 240 ml water
  • 300 ml thickened cream
  • punnet fresh berries

Method

  1. Put chocolate and water in a heatproof bowl over a saucepan of simmering water and heat until melted. Put bowl inside a larger bowl and pour in enough iced water to come up the sides. Using an electric mixer, whip for about 5 minutes or until mixture cools and thickens.
  2. Spoon into glasses and chill until set (usually takes 30 minutes).
  3. Whip the cream and place a scoop of whipped cream on top of the chocolate mouse and top with berries to serve.

  • My kids love chocolate mousse. I use raw diary-free sugar-free chocolate and coconut cream, since my youngest is on diary-free.

  • A classic Heston Blumenthal recipe – only he could come up with the concept of mixing chocolate with water. Science and food going mad! Love it.
