A very simple and yet pleasing dish for the whole family.


Ingredients (serves 4)

  • 1 Packet Fettuccine - Use just over half
  • 3 garlic cloves - crushed
  • 4 Pieces of bacon - Chopped
  • 1/2 Cup Chicken Stock
  • 300mls Thickened cream
  • 1 Egg - Beaten
  • 1 Cup Diced Chicken - Optional
  • 1/3 Cup spring onion - chopped
  • Sprinkle of grated parmesan - optional
  • 1 Onion - Halved and Chopped

Method

  1. Saute brown onion and garlic - add bacon until brown
  2. Blend in stock and cream - bring to the boil - the reduce heat and simmer until thick
  3. Blend in egg + salt and pepper, stir constantly
  4. Stir through cooked pasta and spring onion - Serve with parmesan.

  • My husband’s favourite dish is spaghetti carbonara. I often use pancetta (Italian bacon) instead of ordinary bacon but I have never thought to add chicken; an interesting idea.

  • One of my favourite pasta dishes! Unfortunately I can’t eat pasta, but I do substitute with rice & it’s almost like a risotto dish. Thanks for sharing.

  • What an easy and tasty recipe. Its cost effective too and there wouldn’t be many people who wouldn’t like this. Fantastic. Can all be cooked in the same pot too so less washing up!
