This jam tastes great. Do try this recipe with half strawberries/half peach for another taste sensation


Ingredients (makes 3 jars)

  • 1kg peaches (stems and seeds removed)
  • 1 lemon
  • 3 cups sugar

Method

  1. Cut lemon in half and squeeze juice into large microwave cookware bowl. Remove seeds from lemon, and chop up rind and add to the bowl
  2. Chop up peaches (with the skin) and add to lemon. Microwave on high for 6 minutes, stir at 3 minute mark
  3. Add sugar and combine thoroughly. Microwave on high for 20 minutes, stirring at each 5 minute mark.
  4. Pour into sterilised jars (basically wash, rinse and boil them for 10 mins, then dry in 110 degree oven for 15 mins)

Notes

Keeps for up to 2 months. Hardly any washing up to do after making this jam

  • Love the idea of using a microwave to speed the process up but could probably never bring myself to do it that way. Something relaxing and enjoyable about making preserves the way I was shown by mum growing up, bit of nostalgia but my preferred way. Thanks for sharing though.
