Ingredients (serves 20)

  • 2 1/4 cups Plain flour
  • 1 tblspn Cornflour
  • 250g Butter
  • 1/2 tsp Vanilla essence
  • 1/3 cup Caster sugar

Method

  1. Sift flour and cornflour and set aside
  2. Beat butter with electric mixer until soft
  3. Add vanilla essence and sugar and continue beating until light and fluffy
  4. Add flour to butter mixture with metal spoon
  5. Press mixture into lamington tin. Mark into fingers and sprinkle with a little sugar
  6. Bake 150degrees for 40 minutes.

Traditional tasting shortbread

  • I’ve always added rice flour to my short bread not corn flour
