Really easy to whip this up if having visitors. It's a lovey cross between a slice and a cake and goes perfect with a cuppa!

Ingredients (makes 1 Large slice)

  • 1 1/4 Cups SR Flour
  • 1 Cup Sugar
  • 1 Cup Desiccated coconut
  • 1 Cup Sultanas
  • 1/2 - 3/4 Cup Chopped dried apricots
  • 1 Cup Milk
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla extract


  1. Mix all together until well combined.
  2. Pour into a lined slice tin and bake in a pre heated 180 degree oven for 35-40 minutes or until golden and skewer comes out clean. If it starts to brown too much on the top, cover loosley with foil for the remaining cooking time
  3. Allow to cool in the pan for 15 minutes before turning out onto a wire rack to finish cooling

  • You could use fresh apricots if you wanted to. You may need a fraction less milk or it take a little less time to cook.


  • Perfect morning tea treat. I have some fresh apricots that I have been wanting to dehydrate so finding this recipe is perfectly timed.

  • sounds like a very simple and easy recipe. Might take out the sultanas and apriocots tho (defeating the name i know) and add what ever else i have already on hand
