My mother loves waffles and I got a free waffle maker with a magazine subscription. It was one of those old school ones that uses a gas burner. Not only was making them fun, they turned out beautiful – not too sweet with a great texture!


Ingredients (makes 12 waffles)

  • 2 cups plain flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 2 eggs, separated
  • 1/2 cup oil
  • 2 cups milk

Method

  1. Sift all dry ingredients together in a large mixing bowl.
  2. In a separate bowl, beat egg whites until soft peaks form.
  3. In another bowl, whisk egg yolks, milk and oil, then add to dry ingredients and mix well.
  4. Gently fold in egg whites a third at a time.
  5. Cook in any waffle maker for recommended period of time.

  • Waffles are always hit and miss with me. I want to give this recipe a try, especially since it requires only two eggs. My usual recipe requires six eggs, so I don’t make them that often,

  • I had an electric waffle maker. Bit of mucking around with the eggs etc but the results are worth it.

  • I love waffles. I’ve not used my waffle maker in a while. I’ll have to use it to make these and I might put some fruit and the Nutella and cream cheese dips with them. It’s great when a few ideas come together to make a meal/event. Thanks for sharing.
