Focaccia is one of those recipes that becomes a family favourite from the first time you bake it.

This recipe for Focaccia is quick, easy and delicious! We definitely think it’s one you need to memorise.

The wonderful thing about this Foccacia recipe is that it will let you have some fun. It will also let you get creative!  Add extra flavours with fresh herbs, spice it up with some chilli flakes or add a mountain of cheese for a real treat.

Where was Focaccia first made?

Focaccia is a popular style of flatbread in Italian cuisine prepared using focaccia dough, rosemaryolive oil and salt, sea salt or kosher salt.
Many historians believe that focaccia was born in North Central Italy in the days before the Roman Empire. Or long before that in Ancient Greece at the beginning of the first millennium. It’s hard to say.
Focaccia typically has a moist texture. It is typically baked but some do like to fry their focaccia in oil.

Tips for Focaccia.

  1. Work your dough – at first kneading give it a really good go.  Knead for at least 5 minutes to remove air bubbles. Then work it well with your fingertips to get it to assume the shape of your baking tray.
  2. Don’t be afraid of a hot oven – your focaccia will be super happy covered in lovely olive oil basking in a hot oven.
  3. Go heavy on the seasoning – this focaccia will happily carry lots of garlic, olive oil, lashing of fresh herbs and salt.  Go to town with the seasoning!

Here’s what your focaccia should look like before it goes in to be baked:

Notice how the olive oil sits beautifully in all the ‘dimples’ …

Additional ideas for Focaccia.

This focaccia recipe is fairly straight up but it’s a wonderful base recipe.  Here’s a few ideas:

  • Poke small chunks of semi dried tomatoes into the dimples of the dough.
  • Sprinkle with chilli flakes.
  • Season with Sumac or Sesame Seeds.
  • Pop small seeded black olives into the dimples of the dough.

You could even go really crazy and take out the savoury components of the recipe and replace with sweetness!

Imagine folding choc chips through the dough or drizzling caramel on top. Or channel donuts and sprinkle with cinnamon and sugar!

Ingredients (serves 6 | makes 1 Loaf (30 x 25cm approx))

  • 150ml Lukewarm Milk
  • 150ml Lukewarm Water
  • 3 tsp Dried Yeast
  • 1 tbsp Caster Sugar
  • 1 tsp Salt & Pepper
  • 500g Bread Flour (a high protein flour)
  • 4 tbsp Bertolli Organic Extra Virgin Olive Oil Fruity Taste
  • 1 tsp Dried Oregano
  • 3 tsps Fresh Herbs
  • Extra for Garnish: Bertolli Organic Extra Virgin Olive Oil Fruity Taste, Salt, Pepper and Fresh Herbs

Method

  1. Combine the milk and water, yeast and sugar in a large mixing bowl, mix very gently and allow to sit for 5 minutes.
  2. Combine the flour, salt, pepper and dried oregano in another bowl and mix to combine.
  3. Pour the olive oil into the milk/yeast mixture then add the flour. Mix into a dough and then turn this out onto a floured board or benchtop.
  4. Knead for at least 5 minutes then place into an oiled bowl and cover with a warm, damp, clean tea towel. Set in a really warm place for at least an hour or until the dough has doubled in size.
  5. Line a large baking tray with baking paper and place the dough into the centre. Gently use your fingertips to push the dough out towards the edges of the tray.
  6. Use your fingers to create 'dimples' all over the top of the dough. Then drizzle olive oil all over (which will sit in the dimples), sprinkle with fresh herbs, salt and pepper and allow to sit for another half hour.
  7. Bake for 12 - 15 minutes (or until golden brown) in a hot oven (200 degrees Celcius).
  8. Once out of the oven, drizzle a little more olive oil over the top, chop into squares or slices and enjoy!
