It is also delicious with goats cheese or a poached egg on toast.


Ingredients (makes 1 bowl)

  • 1 bunch fresh asparagus
  • 1 small cos lettuce
  • 6 cherry tomatoes
  • Ready made salad dressing (I like Paul Newman's Own Classic)

Method

  1. Prepare and boil asparagus for 2 minutes, then drain immediately and cover with cold water. Leave in water until cold, then remove from water.
  2. Trim and finely cut lettuce and slice tomatoes. Place in bowl and top with cold asparagus and dress to your liking.

Notes

I am the only one in my family that loves asparagus. This is a go to recipe for days when I want a luscious salad and have little time to prepare.

  • I actually want to make this! (As opposed to just stuffing it in my face!!! ) small number of ingredients and short prep – yes please! Winner winner salad for dinner!

  • Looks so healthy. Fresh asparagus nicer than the canned ones as they are stored and comes out soggy . I stirfry asparaguses in garlic and oil which tastes nice too .
