A tastey, relatively healthy and quick meal the whole family will love


Ingredients (serves 4)

  • 2 cups Cooked and cooled rice
  • 1 onion, peeled and finely chopped
  • 1 carrot peeled and sliced diagonally
  • 3 or 4 mushrooms, chopped small
  • 2 eggs, whisked, fried and chopped up
  • 1/3 cup corn kernels
  • 1/3 cup peas
  • 1/2 finely chopped red capsicum
  • 1 Tblsp soy sauce
  • 1 Tblsp fish oil
  • 2 Tblsps kecap manis
  • 2 rashers bacon, finely chopped
  • 1 tsp sesame oil

Method

  1. Whisk together 2 eggs, add some garlic and ginger for added flavour. Heat frying pan, add a splash of sesame oil and 1 Tbsp canola oil. Add egg, spread round pan so it cooks flat. Remove and chop up
  2. Heat a little more oil in frying pan, add veggies and fry til softened.
  3. Add rice to pan, fry 5 minutes. Add sauces and stir to combine. Serve

Notes

This a family favourite. Easy and delicious. We have sweet and sour chicken with it usually

  • I have not done fried rice for a long time,so this gave me ideas to do it again as it is a dish that can be seved hot or cold. Yours looks yummy a sightto taste and behold. Just learning a lot more (as neccessary1) to take photo’s, the buddha is magnificent and gold (a favourite colour of mine) taken on visit to Nan Tien templet taken by me this year
