Looking for a simple but exotic breakfast idea with tropical sweetness, coconut smoothness with a toasted nutty crunch? Try this recipe to see how easy a health retreat style breaky can be! Maybe a little bit of prep but super easy when you have all the ingredients!


Ingredients (serves 1)

  • 25g watermelon (6 balls)
  • 25G rockmelon (6 balls)
  • 30G blueberries
  • 40G pear
  • 180G coconut yoghurt
  • 25G pomegranate
  • 20G passionfruit
  • 20G pepitas
  • 20G hazelnuts
  • 10G sesame seeds
  • mint leaves to decorate

Method

  1. Toast seeds in fry pan until golden
  2. Slice pear in slicer to make little chip shapes
  3. Make balls from watermelon and rock melon
  4. Whack seeds out of pomegranate 
  5. Layer melon balls, blueberries, pear, coconut yoghurt, pomegranate, passion fruit, toasted seeds, coconut flakes and mint to decorate

  • Preparing fruit and other ingredients for fruit bowls and fruit salad dishes is for me quite relaxing and enjoyable. A terrific sounding and looking fruit salad.
