A healthy meal for the whole family.


Ingredients (serves 4)

  • 1 cup rice ( long grain works well )
  • 4 rashers shortcut bacon
  • Half chicken breast
  • 1 carrot grated
  • 1 celery stalk sliced
  • 1 handful bean shoots
  • 4 stalks of spring onion sliced
  • 2 eggs
  • 1 tsp crushed garlic
  • 5 tbsp soy sauce
  • 5 tbsp ketchup manis
  • 3 tbsp worcestershire sauce
  • 1 tbsp honey

Method

  1. Microwave rice as per packet instructions, allow to cool and place in the fridge for at least one hr
  2. Clean and prepare fresh ingredients , carrots, celery, spring onion & bean shoots
  3. Slice chicken and bacon into small cubes
  4. Place sesame oil in a small frying pain and add your chicken, bacon, garlic, soy, ketchup manis, worcestershire sauce, and honey, fry until cooked
  5. Place vegetable oil in a large frypan and add your cold rice , stir through the oil before adding vegetables
  6. Place 2 eggs in a microwave safe bowl, whisk well and cook for 2 mins , when cooked tip onto chopping board and slice roughly into small cube like pieces
  7. Add chicken & bacon with the sauce left in the small frying pan, then add egg, stir and serve

Notes

You can add or subtract from the fresh ingredients to suit your family's likes, my daughter hates peas but if she's not here I use peas instead of celery

  • *Note- If making for large family or large serves I would double theses quantities- equaling in around 6 large serves

  • I don’t like cooking in the microwave but it can be easily done on the stove of course :)


    • You can certainly cook it on the stove, I’m also not a big fan of the microwave but I love how fluffy and oil free it makes the eggs.

    • It gives the best fluffy texture, stops it from being all oily and it so easy to prepare, my uncle is Chinese and cooks his eggs like this for rice. :)
