These Gluten-free muesli bars are very easy to prepare and enjoy!


Ingredients (makes 14 muesli bars)

  • 125 grams unsalted butter
  • 1/3 cup coconut sugar
  • 2 tbsp rice malt syrup
  • 1 1/2 cup puffed brown rice
  • 1/2 cup self-raising gluten-free flour
  • 1/3 cup chopped dried cranberries
  • 1/3 cup chopped dried dates
  • 1/3 cup mixed dried fruit
  • 1/4 cup pumpkin seeds
  • 2 tbsp sesame seeds

Method

  1. Preheat oven at 160 degrees.
  2. Line a 20 x 30 cm baking tin with baking paper.
  3. In a pan gently melt the butter with the coconut sugar and the rice malt syrup. Let slightly cool.
  4. In a big bowl combine all the other ingredients. Then add the butter mixture. Mix well.
  5. Pour the mix into the baking tin and press firmly.
  6. Bake for 35 minutes.
  7. Let cool down before cutting the muesli bars.

Notes

Freeze it and defrost it for a lunchbox treat! Follow your taste choosing the ingredients. You may add nuts for example or use different types of flour, seeds or sugar. For an extra treat, you could put some melted dark chocolate on top!

  • Reading other comments will be careful about the dried fruits. Mainly get mine freshly dried so safe with those ones.

  • Hate to spoil your fun but……..If you have to make this as gluten free for medical reasons, check the dried fruit. I recently bought some and didn’t check it. The dried apricots were NOT gluten free. They had either used flour in the drying process or maybe to stop the pieces from sticking together.
    NO gluten free muesli bars the first time I tried this recipe. I had to hide them.
    Just as well I clean the food preparation areas thoroughly. I now have to make sure there is no residue on tray I washed. May be safer to buy a new one and store in the GF cupboard. I don’t like seeing kids or adults suffer from gluten poisoning.


    • I never knew that some dried apricots may not be gluten free!
      No, I don’t have any special medical reason for making the muesli bars gluten-free.
      Glad you pointed it out.
      I’ve just checked a bag of dried apricots I’ve got and there isn’t written gluten-free. The only allergy advice they write down is: “contains sulphites”.
      Checking in Internet I see that some celiac people had bad reaction to dried apricots and dates too. Main reason seems to be that some companies dust lines with flour to prevent sticking. But in that case I expect them to write down on their package that the product had been in contact with gluten.
      How did you find out?

  • We are not gluten free at our place but these look wholesome and attractive. . The puffed rice loos a bit like rice bubbles.


    • Yes, but with the difference that the rice bubbles contain sugar, while the puffed brown rice (that I bought in the gluten-free section of the supermarket) does not.
