These healthy chocolate bliss balls are a fantastic idea for kids school lunchboxes.

Ingredients (makes 12 Chocolate balls)

  • 1 Banana
  • 8 Mejool dates
  • 1 cup Rice flakes or corn flakes (can use hazelnuts or almonds but not for school lunchboxes)
  • 2 tsps Cacao
  • 2 tsps Coconut oil
  • 1/3 cup Chia seeds
  • 1/2 cup Coconut for rolling

Method

  1. In a food processor blend up the rice flakes (or corn flakes or nuts - do not use nuts for sending to school), with the cacao.
  2. Add banana and coconut oil and blend.
  3. Drop in dates one by one while processor blending.
  4. Stir in chia seeds by hand.
  5. Roll into balls, coat in coconut and put in fridge until firm.

  • Bliss balls are the best. You can hide so many ingredients in them.

  • These are the best in all their different forms – you can add any/many ingredients to create chocolate balls or truffles as I knew them.

  • Personally I don’t think corn flakes or rice flakes are very healthy, as they are very processed and packed with sugar. When you want to make them nut free sunflower seed / pumpkin seeds / or desiccated coconut are a good option.
