A quick meatball recipe that’s our family favourite. The hidden veg is great, add more grated veg, or cook in a crushed tomato sauce
Use any mince, chicken, lamb or beef


Ingredients (serves 4)

  • 500g Mince
  • 1 Carrot, grated
  • Fresh herbs, chopped fine
  • 2 Eggs
  • 1 cup Baby spinach, chopped fine
  • 4 Garlic cloves, crushed

Method

  1. Mix all ingredients in a bowl thoroughly
  2. Roll into small balls
  3. Fry slowly until golden
  4. Serve with dipping sauce

  • Meatballs are a winner in our household especially for school lunches and snacks. This is different to the recip I make so I’ll have to give this one a go.

  • Seems easy enough to make and the ingredients are quite simple.
    I’d omit the garlic as I’m not a fan but everything else sounds yummy.
