Almond croissants are actually not difficult to make at all! t
This recipe is one of my guilt trip to heaven :)


Ingredients (makes 3 Large Almond Croissants)

  • 3 large Croissants
  • 170gm Almond meal
  • 120gm butter
  • 170gm Sugar
  • 2 small Eggs
  • 2 handful Flaked almonds
  • To taste Honey

Method

  1. Cream butter, sugar, eggs until well combined. Add in almond meal and mix well until creamy. Set aside.
  2. Cut the croissant across and spread with honey. Fill one side with the almond mixture you just made. Close the croissant and put more on top.
  3. Layer flaked almonds on top of everything and bake for 15 minutes under 175C.

Notes

Make your own almond meal by grinding raw almonds. If you like some crunch in the almond croissant, just avoid grinding the almonds too fine. This recipe allows you to put extremely generous amount of the almond filling in each croissant which I love. If you think they are too much, just increase the amount of croissants or lessen the almond mixture.
