Can you freeze the dough?

Yes! One of the reasons our community adores this recipe for Subway Cookies is that it can be made ahead of time, frozen and pulled out when you’re ready to bake. Simply combine all of the ingredients, roll it into a log, wrap it and freeze it.

Like most cookie dough, it will keep for several weeks in the freezer, and to defrost, just pop it on the bench for a few hours ahead of baking.

  • Remember, they’ll keep cooking for a few minutes after they come out of the oven, so don’t overbake them!

Here are some fantastic variations to try out:

  • Ultra Chocolate – Add cocoa to the dough for a chocolate base
  • Rainbow – Instead of choc-chips toss in a few handfuls of M&Ms or smarties for a rainbow effect
  • White Chocolate – Instead of milk chocolate, add white-chocolate chips or chunks
  • Fruit – Mix in dried fruit like sultanas or berries for a fruity twist on the classic recipe
  • Nut butter – Try some almond or peanut butter for an extra hit of goodness
  • Honey & Oats – Leave out the chocolate chips and sugar and use honey and oats for a lunchbox-friendly option

Ingredients (serves 15 | makes 30 cookies)

  • 2 cups self raising flour
  • 170g melted butter
  • 185g brown sugar
  • 110g white sugar
  • 1 tablespoon vanilla essence
  • 1 egg
  • 1 egg yolk
  • 2 cups dark Nestlé Choc Bits

Method

  1. Preheat oven to 165 degrees Celsius and line two baking trays with baking paper
  2. Sift flour and set aside
  3. In a bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy.
  4. Mix in the sifted ingredients until just blended
  5. Stir in the Choc Bits by hand using a wooden spoon. Drop big round tablespoons of dough onto prepared cookie trays (leave room for spreading)
  6. Bake for 15-17 minutes in the preheated oven or until the edges are lightly toasted. Cool on baking sheets for a few minutes before trandfering to wire racks to cool completely.

Notes

- I like to make a batch, roll it into a log and place in the freezer and quick and easy go to cookie dough. - You can also leave over a few tablespoons of the Choc Bits to place ontop of your cookies while they are cooling down. This is great for presentation.
