An impossible quiche recipe is a must-have in every family’s bag of tricks. It’s quick, easy – and appropriately named because you’d never guess that a delicious quiche could be SO simple and require no pastry!

What is impossible quiche?

An impossible quiche is so-called because it requires no pastry base yet still produces the true quiche texture and flavour we all love. Many people love it because it’s a healthier way to enjoy quiche, without all of the calories (and effort) of pastry.

Whipping one up is actually a very easy task, in fact, older kids could even handle it without a problem. All you have to do is mix all of the prepared filling ingredients together and then pour it into a standard quiche dish or any other baking dish you have on hand.

During the cooking process, the mixture separates to make a lovely base with a true quiche top, with minimal effort on your part.

If you think this recipe sounds impossible, improbably and completely unlikely – give it a go, because you’ll be amazed at how well it turns out. And once you’ve realised that it is entirely possible, you can start getting creative with your fillings. Basically, anything you’d add to a standard quiche can go into this recipe, such as:

  • Smoked salmon
  • Pancetta
  • Feta or goat’s cheese
  • Mushrooms
  • Caramelised onions
  • Asparagus
  • Marinated capsicum
  • Olives

As you have some eggs on hand (we always select Free Range Eggs), you can clear out the leftover veggies in your fridge by adding them all into this delicious dinner idea. The quiche will keep for a while in the fridge and is potentially even more delicious to eat cold. Like pizza, it takes on a new quality when refrigerated overnight – that kind of special something. The flavours become more enriched in the egg filling and the sweetness of the capsicum and onion is enhanced.

This delicious quiche can be served warm with an impossibly big side salad for dinner. Or, you can refrigerate it and take it cold on picnics, or pop a slice into the kids’ lunchboxes (or your own!). Enjoy!

Ingredients (serves 6 | makes 1 Quiche)

  • 4 eggs
  • 1 and 1/2 cups milk (regular or low-fat)
  • Pinch salt and pepper (to taste)
  • 1 cup grated tasty cheese
  • 1 onion (finely chopped)
  • 1/2 cup self raising flour
  • bacon, tomato, mushrooms (whatever you have on hand)

Method

  1. Combine everything together in one large bowl, mixing well.
  2. Pour into a greased quiche dish or baking dish.
  3. Bake for 40 minutes at 200c.

Notes

I have made this Impossible Quiche so many times over the years and the quiche dish is always empty at the end of the meal. I hope you have the same success!

  • I actually came back and tried this lastnight. Added a few random ingredients from the fridge but turned out AMAZING!!! Forgot how easy they are to make and delicious

  • I always use pastry but because I’ve never mastered the art of blind baking (yes I’ve been told it’s easy but my sides always collapse) my pastry always comes out soggy. I might give this a go next hot day.
