You can use any type of jam. I prefer strawberry. It is a simple recipe, great for visitors or an afternoon snack
Ingredients (serves 8)
- 12 sweet pastry tarts cases (frozen)
- 1 cup coconut
- 1/2 cup sugar
- 1 egg
- 1/2 cup strawberry jam
Method
- Mix coconut sugar and egg until well blended
- Put frozen tartlets on a biscuit tray uncooked. Spoon a teaspoon of jam into each one.
- Top each one with coconut mixture. Bake at 180 degrees until topping is golden and pie cases are cooked. let cool on tray.
