This is a traditional Macedonian food. This particular recipe has been passed down through the generations of our family and recently my grandmother has shared it with me. We bake together twice a month on a Thursday and she shares with me our family baking traditions so I am able to pass it on to my girls and keep this tradition in our family


Ingredients (makes 32 kifli)

  • 1.5 sachets dry yeast
  • 3 tbs sunflower oil
  • 1 tsp salt
  • 1.5 kg plain flour
  • 4 eggs (2 yolks separated for basting)
  • 1/4 cup sesame seeds
  • 350g fetta cheese
  • as required warm water

Method

  1. On a clean table place flour in a mound. Make a well to the centre of the mound by pushing flour outwards. In the centre of the mound place dry yeast, sunflower oil, salt, 2 whole eggs and 2 egg whites, and slowly start to incorporate flour. Add warm water as required and continue to knead until dough has formed. If the dough is sticky, add a sprinkling of flour as much and as often as required. Knead dough for 10-15 minutes, then place in a warm place allowing dough to rise.
  2. Once dough has risen, divide evenly into smaller pieces, approx 8. Each of these 8 to be rolled out into a circle base and cutting through (like a pizza) 8 slices. In the thicker of each now triangle slice place some crushed feta cheese and a small amount of beaten egg. Folding the sides in and rolling down to the smallest making a crescent shape. Place aside on a tray ready for baking. And complete the remainder of the dough
  3. Basting the tops with a small amount of egg yolk and topping with sesame seeds. Place in the oven on 160degrees for 15-20minutes until golden brown

Notes

You could also try and use a different filling if you wish. Traditionally we use feta and egg but you could mix it up and even turn it into a desert with a sweet filling.
