If you like coconut and lemon curd, this is the recipe for you!

Ingredients (makes 20 cookies)

  • 125 ml coconut oil, melted
  • 3/4 cup coconut sugar
  • 1 cup coconut flour
  • 1 1/3 cup desiccated coconut
  • 1 tsp vanilla essence
  • 3 eggs
  • 2 tsp baking powder
  • lemon curd

  1. Preheat oven to 180 degrees.
  2. In a bowl mix the melted coconut oil and sugar together. Then add the eggs, one by one, and the vanilla essence. Incorporate the coconut flour, baking powder and desiccated coconut. Add extra coconut flour and desiccated coconut till you reach one mixture you can handle.
  3. Line a baking tray with baking paper. Make small balls with the mixture, put them on the tray and slightly flatten them. (I got around 20)
  4. Then, with the back of a spoon or your thumb, make a little hole in each cookie. Put a little teaspoon of lemon curd inside each hole.
  5. Bake for around 14 minutes.

  • All the coconut lovers rejoice. Mmm..

  • You can always jam if you prefer, or chocolate spread. :-)

  • Ooh, this looks delicious. A change on the jam drop but equally as yum.

  • Love love love lemon curd! How long will these keep and do they need to go in the fridge?

    • Hi! No, no need to go in the fridge. And they will keep for 4-5 days.

  • Thanks everyone! :-)

  • great recipe! haven’t tried this one out before…will be a hit!

  • These are little beauties!

  • Yum, looks great, cannot wait to try making them.

  • These look delicious; thanks for sharing!.

  • Nice recipe, we LOVE coconut ! Will try it out with less sugar, as I think 3/4 cup is a lot.

    • That’s a good idea. Let me know how it goes!

      • I used 1/3 cup of raw coconut sugar and they totally worked out well ! Also used a fruit juice sweetened jam without sugar, to keep it a bit more healthy. And I tried a couple of cookies with mashed up strawberry made gel-like with chia seeds, those were just as delicious :)

  • These sound wonderful. Thanks for sharing.

  • Thanks going to try these

  • Will definitely use this recipe – just need to make some more lemon curd.

How would lime curd go? Would you make it the same way? My tree has copious limes this year.

    • I’m not sure, but I would say: “Why not?”
If you try it, would you let me know the result?

  • Coconut favour, yum, my favourite.

  • Thanks everyone! Yes, probably more than lemon curd drops, they should be called coconut drops with a little bit of lemon curd! :-)
