These lemon rice bars are an easy to make snack.
Ingredients (makes 15 Bars)
- 1 Zest of one lemon
- 1 Juice of one lemon
- 300g Marshmallows
- 6 cups Rice Bubbles
- 4 1/2 Tbsp Butter
- Melt butter in a saucepan with lemon zest and juice.
- Add the marshmallows and mix until all the marshmallows have melted. Then take off heat.
- Combine marshmallow mix with the rice bubbles. Then spread out over a lined baking tray. Size depends on how deep you want your bars to be. Leave for half an hour to an hour. Cut up to a snack size that suits and enjoy!
