Yum! This vegetable soup is sure to keep you warm this winter!


Ingredients (serves 4)

  • 1 Pouch of Tilda® Garden Vegetable and Quinoa Basmati rice
  • 2 tbsp Olive oil
  • 1 Red onion - chopped
  • 1 Celery stalk - chopped
  • 1 Carrot - chopped
  • 1/2 Red chilli – finely chopped
  • 2 tbsp Moroccan seasoning
  • 750ml Vegetable Stock
  • 1 Can of chickpeas- drained
  • Natural Yoghurt
  • Chopped Coriander

Method

  1. Heat 2tbsps olive oil in a large pan
  2. Fry onion, celery, carrot and chilli for approximately 5 minutes
  3. Add Moroccan seasoning and fry for 2 minutes
  4. Pour over vegetable stock
  5. Add chickpeas and Tilda Garden Veg Quinoa and Brown Basmati Rice and heat for 3-5 minutes.
  6. Serve with natural yoghurt and chopped coriander.

  • We’ve just finished off our vegie soup I made on the weekend. It was warm, hearty, filling and delicious. However, I’m always looking for new and varied options, and minus the chilli, this sounds like one we must try.

  • I’ve just made vegetable soup in the slow cooker – Mum’s recipe. However, I’m always up for something new and love this version. I would leave out the chilli and coriander, but otherwise it makes my mouth water.
