So easy and so simple. If you are using really ripe mangoes you can cut back on the sugar. You can also adjust the spices depending how you like it. It’s very adaptable.


Ingredients (makes 8 jars)

  • 1.5 kg mangos
  • 500gram onions
  • 2cups white vinegar
  • 1tsp mustard seeds
  • 1tsp ground cloves
  • 1tsp all spice
  • 1tbs curry powder
  • 2 cups white sugar
  • 2 dsp salt
  • 1tsp nutmeg

Method

  1. Peel and chop mangos and onions. Place in to a large boiler. Add all the other ingredients and gently bring it to the boil.
  2. Once boiling, turn the heat back and gently simmer until it begins to thicken slightly. At approximately 1 hour, I then blitz it with a hand blender but that is optional. I';m not keen on lumps, I much prefer a smooth consistency but totally up to you.
  3. Place clean glass jars into a hot oven, once they are hot pour the chutney into the jars and seal with jam covers.
