If you want to make rustic Spanish-style dishes at home, you can’t go past McCormick Flavour Shots Spanish Chicken Hotpot.

Serves 4   |   Cooks in 30 minutes

Ingredients

  • 1 McCormick Spanish Chicken Hotpot Flavour Shot
  • 500g chicken thigh fillets, cut in half
  • 1 onion, chopped
  • ½ cup of Arborio or medium grain rice
  • 1 red capsicum, chunky diced
  • 140g tomato paste
  • 2 ½ cups chicken stock
  • ½ bunch fresh coriander, chopped

Method

  1. Stir contents of Flavour Shot, then spoon into a large pre-heated frying pan. Add the chicken and onion, stir to coat and coo on medium heat for 5 minutes.
  2. Add the rice and fry for a further 5 minutes, stirring frequently.
  3. Add the capsicum, tomato paste and stock. Stir and gently simmer for 20 minutes, stirring frequently.
  4. Add the coriander and stir through.
  5. Season to taste and serve. Delicious served with crumbled feta cheese and sliced black olives.

Hints & Tips

  • Try using prawns or white fish fillets as an alternative to chicken.
  • Like it a bit more spicy? Try stirring in a pinch of dry Chilli Flakes before serving.

McCormick Flavour Shot – Spanish Chicken Hotpot substituted with Beef! The flavours worked perfectly with Beef and the hotpot was delicious. A convenient 1 pot meal that is delicious for the whole family. I added potatoes for my toddlers! You could easily ‘hide’ more vegetables in this dish and the kids would not know!


Ingredients (serves 4)

  • 500g Beef
  • 1 Onion
  • 1/2 cup Arborio rice
  • 1 Red Capsicum
  • 140g Tomato paste
  • 2.5 cups Chicken Stock
  • 2 Small potatoes

Method

  1. Add oil to a pan and stir the onion until brown.
  2. Stir contents of Flavour Shot into a pan.Add the beef and potatoes, stir regularly to evenly coat
  3. Add the rice and continue to stir occasionally for a further 5 minutes
  4. Add the capsicum, tomato paste and stock. Mix well.
  5. Gently simmer for 20 minutes, stirring frequently.

  • I’ve only found three of the “Flavour Shots” (Pad Thai, Chilli Con Carne & Chicken Fried Rice) in our local IGA. Our local Coles & Woolies don’t have them yet, which is a shame. I’ve made a variation of the Chilli Con Carne, and I’ll keep looking for the Chicken Curry & Spanish Hotpot, because I really want to try them. I love that you thought “outside the square” and you weren’t afraid to substitute other meat for the chicken.
