Get organised for the hectic weeks ahead when school returns. These easy to make mini quiches can be made now and frozen for a grab and go lunch the kids will love


Ingredients (makes 15 Mini quiches)

  • 3 Eggs, beaten
  • 1/2 cup Ham or bacon diced finely
  • 1/2 cup Tasty cheese, grated
  • 2 Spring onions, finely sliced
  • Salt & pepper
  • Parsley, chopped finely

Method

  1. Add all ingredients together and mix to combine.
  2. Spoon into a greased mini muffin tray, and put into a pre heated oven set to 180 degrees
  3. Cook for approximately 15 minutes or until egg has set and they are golden brown

Notes

Store in the fridge for up to 5 days in an air tight container, or freeze wrapped tightly for use when needed
