Ingredients (serves 2)

  • 1 cup Dried mung beans
  • 2.5 cups water
  • 3 T Coconut sugar
  • 1 t Sea salt
  • 2 T Coconut milk or any other dairy of choice to serve

Method

  1. Wash and rinse the mung beans and cook with the water for about 1 hour on really low heat.
  2. Add in salt and sugar and continue to simmer for another 15 minutes.
  3. Serve with coconut milk or any other milk of choice. Full cream milk works well too.

  • this is definately a great recipe. you can get mung beans from asian shops. should try this. thanks for sharing your recipe. it is great to see something different on here. i have only ever had mung bean as an addition in noodle soups and it is yummy. haven’t ever tried it with coconut milk

  • Now this is different, but it reminds me of some of the dishes we had in China. Would be something different for breakfast perhaps?
