Honey joys are a good old fashioned favourite. They’re equally perfect for morning teas, as a sweet treat in school lunchboxes, and for dessert. Honey joys are also great to bring to a party, but watch out – they’ll go fast!

Whoever first thought of combining cereal with oily sugar to create a crackly, crunchy sweet treat was probably both an idiot and a genius. The earliest recorded recipe for honey joys is in the 1930s, and since then they’ve been an Aussie favourite at parties and as simple snacks alike. Chocolate crackles are a close cousin to honey joys, and, just like rice bubble cups, will bring all the kids to the yard at parties.

Most people agree that the best part about making honey joys is that the cereal forming the bulk of this treat is accessible and close at hand. Whether you opt for the classic old fashioned cornflakes for your honey joys or try something more modern like crunchy nut cornflakes, it’s so handy to know that you’ll have all the ingredients you need.

It’s important to also consider the honey you use for your honey joys. You might have a jar in the pantry that’s lived there for years and obviously you should use that up first! But if it’s nearly time to buy more honey at your house then you should jump online and check out some local beekeepers in your area that sell honey. Their honey will be fresher, and you can guarantee where it’s come from and how it’s made. I used to buy honey from a cute little wooden box at the end of someone’s drive that I passed on my way to school. I would just leave some dollars in the bee-shaped piggy bank and go home knowing I’ve both supported a local and nabbed a fresher, less refined batch of delicious honey.


Ingredients (makes 24 )

  • 90 grams butter
  • 1/3 cup sugar
  • 1 tablespoon honey
  • 4 cups cornflakes

Method

  1. Preheat oven to 150 degrees and prepare the paper cases in patty pans.
  2. Melt the butter, sugar and honey together until it looks frothy.
  3. Add the cornflakes and mix well.
  4. Working quickly spoon the mix into the patty pans.
  5. Bake for 10 minutes. Let cool completely before eating.

Notes

Can also use crunchy nut cornflakes. I have been told that the toffee mixture (the honey, butter and sugar) will hold together all sorts of cereal creations - experiment and have fun.
