This one pot couscous is quick, easy and so so tasty!

Ingredients (serves 8)

  • meat of your choice (eye fillet or chicken fillet for me), cooked to your liking
  • spinach leaves
  • lightly sauteed mushies
  • lightly sauteed onions
  • cous cous (I use a cup and equal amounts of water or stock), a little oil to separate the couscous
  • roasted pumpkin - I toss mine in garlic, honey and soy

Method

  1. Cook couscous as per packet instructions then let it cool in the pot.
  2. Add the meat of your choice, and all the veggies.
  3. Give the ingredients a light stir, then serve on a giant platter, or I make individual containers for lunches too.
  4. Serve with coriander and natural greek yoghurt.

Notes

I just love cous cous and really think it is such a great way to eat.... all the colours, taste and freshness of the ingredients shine!!!

  • Couscous is so easy and light to eat!
    Thank you for sharing this recipe. I always just put veg and soy sauce in it for flavour. Never thought to add yoghurt or anything as a topping either.

  • Ooooohhhhhhh, yum. I really enjoy couscous but mostly use it as a substitute for rice. Can’t wait to try out this delicious looking dish

  • We’ve not really tried couscous in our house. My son doesn’t like it’s texture (by looking at it!) and therefore I’ve not made it. However, I love all of the ingredients in this pot and think I could win the family over.
