Something a little different to try! Super moist and light and fluffy, this Orange Juice Cake will be a hit at your next gathering!

Ingredients (makes 1 cake)

  • 1 box Plain Vanilla Cake mix (I used the home brand)
  • 1 packet Orange jelly
  • 3/4 cup Vegetable oil
  • 1 cup Fresh orange juice
  • 4 Eggs
  • 1 1/2 TBS Orange zest

  1. Pre-heat the oven to 180 deg C and line a cake pan (I used a springform pan) with baking paper
  2. Combine the Cake Mix, Jelly, Oil, Orange Juice, zest and Eggs in a mixing bowl, and beat for 2 minutes. Make sure the sides are scraped down to incorporate all the mix scraping the bowl regularly.
  3. If the mixture is too runny, add in the extra ¼ cup of SR flour and thoroughly mix it in to combine.
  4. Pour batter into the prepared tin and bake 40- 55 minutes or until springy when you touch the cake. If cake starts to brown too much on the top while cooking, lightly cover with alfoil to stop this.
  5. Remove from the oven – let stand 5 minutes then turn out onto a cooling rack to cool completely
  6. You can make a glaze for this cake using 1 cup Icing Sugar and 2 TB Fresh Orange Juice mixed together, or just dust with icing sugar

  • Wow. This looks really interesting. Can you.sub the oil for anything else

  • Looks interesting, thank you for sharing.

  • I have a packet mix for an Orange Cake in the pantry. However, I do love the simple ingredients of this.

  • I like orange cake, especially when you cook the oranges in peel and use it all…so good ! Wouldn’t use a packet of cake mix.

  • Interesting idea, I like the idea of it being so orange-y!

  • We’ve got plenty of oranges on the tree and it sounds very easy to make so will certainly be giving it a try. Looks like I’ve got morning tea sorted.

  • This would be a hit, looks great!

  • Looks so moist and tasty! Great recipe.

    • Using jelly in a cake is an interesting idea – I wonder how it impacts on the texture.

  • I will definitely try this cake and love anything with citrus. Our oranges are also ready on our tree so a great way to use up our fruit, Looks like a nice simple recipe that hopefully even I can’t mess up.

  • Not my kind of recipe but looks nice.

  • Thanks for sharing. I like orange cake, but from scratch and using cake mix and jelly mix packages and refined stuff is not my thing.

  • Interesting ingredients … but it looks fabulous so will give it a go!

  • I love the sound of this cake and it looks quite good thanks!!

  • I’ve never had Orange Juice cake, but funnily enough I have a packet mix in the cupboard for Orange Cake. Might try that first. It may be an acquired taste.
