These pancakes are perfect for a lazy Sunday morning breakfast or romantic date night dessert.


Ingredients (serves 4)

  • 400 g tin cooking apples
  • 1 cup sultanas
  • 1/2 cup sugar
  • 2 tbsp water
  • 1 bottle pancake mixture
  • 4 scoops vanilla ice cream

Method

  1. Place cooking apples, sultanas, sugar and water in a saucepan and heat gently on the stove until the mixture is soft. Set to the side to cool a little.
  2. Cook pancakes according to the instructions on the bottle or make your own pancake mixture.
  3. Top pancakes with apple and sultana mixture, vanilla ice-cream and icing sugar.
  4. Enjoy!

Notes

I usually make my own pancake mixture but like to have a bottle of pancake mixture handy in the pantry for lazy days and for a quick dessert.
