These are great as a mid week easy meal, haloumi cheese is such a versatile ingredient


Ingredients (serves 4)

  • 250g Frozen peas
  • 1/2 cup Milk
  • 2 Eggs
  • 30g Cornflour
  • 2/3 cup Plain flour
  • 1/2 tsp Baking powder
  • 250g Haloumi cheese cut into cubes
  • 100ml Olive oil
  • 1 Shallot thinly sliced
  • 150g Corn kernels
  • 1 pinch Cumin
  • 1 Salt and pepper to taste

Method

  1. Boil peas in salted water for 2 minutes, then drain. Rinse under cold water, then drain again. Puree half the peas in a food processor until smooth.
  2. Whisk milk, eggs, flours, baking powder and pureed peas in a bowl, then fold in remaining peas, corn, cumin, haloumi, shallots, salt and pepper.
  3. Heat the olive oil in a large non-stick frypan over medium-high heat. Add tablespoonsful of the mixture to the pan, in batches, pressing down to flatten slightly, and fry for 2-3 minutes or until golden on both sides. Drain on paper towels.

Notes

You can hide as many vegetables as you like in these too, grated zucchini, mashed pumpkin use your imagination!

  • Mine would see the peas and run a mile, although they will eat frozen ones and cooked ones with a roast.
