You don’t actually need to use pastry for your pie maker recipes. These pie maker mushroom pizzas are absolutely delicious, low fat, low-carb and you can whip them up in minutes.

Ingredients (serves 2 | makes 4 mushroom pizzas)

  • 4 Portabello Mushrooms
  • 4 teaspoons Pizza sauce
  • 4 Mini tomatoes
  • 8 Small spinach leaves
  • 1/4 Capsicum
  • 50g Grated cheese (I used Bega 50% reduced fat cheese)
  • Sprinkle Dried herbs or spices of your choice (I used Tuscan spice and Garlic powder)
  • Sprinkle Smoked paprika

  1. Wash and dry (or wipe) mushrooms.
  2. Remove the stems of the mushrooms and reserve
  3. Chop mushrooms stems, tomatoes and capsicum into small pieces.
  4. Assemble mushroom pizzas - place a teaspoon of pizza sauce on the underneath of each mushroom and spread evenly.
  5. Add 2 small spinach leaves on top. And then add the vegetables on top of the leaves.
  6. Sprinkle herbs and spices on top of mushrooms
  7. Top each mushroom with some grated cheese.
  8. Sprinkle some smoked paprika on the top
  9. Place each mushroom pizza in a pie maker hole and turn on your pie maker
  10. Cook for around 5 minutes or until the cheese is melted and golden.

Notes... When I made this, there was quite a bit of steam coming from the pie maker. Don’t be concerned, it’s just the water from the mushrooms steaming off.

  • Wow these little pie makers are all the rage right now.

  • Oh my, I absolutely love the idea of these. Sad that I just got rid of my pie maker because I never use it… and now I’m discovering all these fantastic hacks. :(

  • Such a brilliant pie maker ‘hack’. So much healthier than regular pizzas and just as tasty.

  • These sound so warm and tasty.

  • omg… i am in love with this! have to do this…love mushrooms.

  • yum though we just call them stuffed mushrooms at our place! Instead of pizza sauce try spring gully brand worcestershire sauce, it is delish and instead of being a base of anchovies like regular w. sauce it is made with apples!

    • Worcestershire sauce is terrific in recipes too – thanks for your tip! :)

  • Thanks for an easy looking pie maker recipe – love mushrooms – so very happy to have this recipe.

  • So quick these look great
