Ingredients (makes 18 pikelets)

  • 1 cup self-raising flour
  • 1/4 cup caster sugar
  • pinch bicarb of soda
  • 1 egg, lightly beaten
  • 3/4 cup milk (approx)

Method

  1. Sift dry ingredients into medium bowl. Make a well in the centre and gradually stir in egg and enough milk to give a smooth pouring consistency.
  2. Drop tablespoons of batter into heated oiled large frying pan, allow room for spreading. When bubbles appear, turn pikelets, cook until lightly browned on other side. Serve warm with butter, or jam and cream

Notes

Enough for brunch and morning tea the next day for us!!
