This is the best treat on a Saturday or Sunday morning.


Ingredients (serves 1)

  • 2 tablespoons finely shredded Jarlsberg cheese
  • 1 egg egg poached in water with teaspoon vinegar
  • 1 thick sliced toasted sourdough italian bread
  • half avocado thinly sliced

Method

  1. Toast the sour dough bread until golden brown and lay slices of avocado on top
  2. Bring water to a boil and then reduce to a light simmer. Add vinegar. Crack one egg into a small bowl. With a slotted spoon, create a gentle swirling/whirlpool of the water and gently pour egg into the middle of the whirlpool. With the slotted spoon, gently remove egg and place on top of avocado .
  3. Top egg with Jarlsberg cheese and season with salt and pepper

  • I absolutely love the look of this. I’m a huge fan of avo, eating it most days, and love eggs too. My hubby does sometimes make me a version with smashed avo, poached egg and baby spinach. I’m definitely going to try this one too.

  • OMG This is so tantalising. I’d probably have this for lunch and everyone can keep their mitts off. Of course I’ll make one for each of them as well. Can’t deny them such a decadent snack

  • We love our brunch on a Sunday. I did it once and now my kids request it every Sunday. I do love the idea of the avocado, we use baby spinach.
