These savoury pancakes can be pan fried as well, however, this is the healthier version if you’re trying to reduce the amount of oil you use in your cooking.


Ingredients (makes 12 pancakes)

  • 250g potatoes, grated
  • 250g zucchini, grated
  • 5 Tbsp oats
  • 1 egg
  • 2 Tbsp plain flour
  • 2 cloves of garlic
  • 1 Tbsp marjoram
  • Olive oil - to drizzle

Method

  1. Preheat oven to 200C and line a large baking tray with baking paper. Mix potatoes, zucchini and oats in a bowl and let it stand for about half an hour for the oats to soak up the vegetable juices.
  2. Stir in remaining ingredients except the olive oil.
  3. Form into small pancakes and arrange them on the prepared tray. Drizzle with olive oil and bake for 10-15 minutes, turn them over and bake for another 10-15 minutes or until golden. Let them cool down and enjoy!

  • Oven baked fritters/pancakes. Never seen them cooked in the oven before. If you fry in olive oil, that’s a good oil and you avoid excess power use with turning the oven on
