Goes great at BBQs. Freezes well for easy reheats mid week.


Ingredients (serves 6)

  • 2kg Potatoes
  • 200ml Thickened Cream
  • 2 Chicken OXO cubes
  • 1 large Onion
  • 6 slices Middle Bacon
  • 2 cups Shredded cheese (pizza mix is best)

Method

  1. Roughly chop bacon and fry until mostly crunchy then set aside on paper towel
  2. Slice onions and potatoes (use mandolin thick slice for more even cutting)
  3. Place a layer of potatoes then scatter onion and bacon before layering more potatoes, onion and bacon until finished
  4. Melt OXO cubes with a tablespoon or 2 of boiling water mix with cream and pour over potatoes
  5. Put into oven uncovered for approximately 45 mins at 170-180 degrees then spread a generous amount of cheese on top and cook until golden brown

Notes

This is a family favourite once you’ve made it you can adjust to your tastes. Leeks also work beautifully with this dish or add grated zucchini great for kids that don’t like veggies

  • I would use shortcut bacon as it has a much lower fat content but you would need more slices.
