A quick easy snack


Ingredients

  • 50 g Grated parmesan cheese
  • 300 g Mashed potato
  • 1 Egg yolk
  • 2 tbs Freshly chopped chives
  • To taste Nutmeg
  • To taste Salt & pepper
  • 50 g Breadcrumbs
  • 2 tbs Vegetable oil

Method

  1. Mix all the ingredients for the potato filling together.
  2. For the breadcrumb coating, mix the oil and the breadcrumbs together. Keep stirring until the mixture becomes loose and crumbly again.
  3. Roll 1 tbsp of potato filling in the breadcrumbs until it is completely coated and place it on the Airfyer basket. Repeat until all the filling is used up.
  4. Preheat the Airfryer to 200 degrees celsius.
  5. Slide the basket into the Airfryer. Set the timer for 4 minutes and fry the potato croquettes until the timer rings and they are crispy and brown.

  • Great recipe to use up all the potato mash & bread crumbs leftovers.

  • So after reading the comments about the breadcrumbs. I actually tried those Japanese Panko breadcrumbs and they turned out SOOOO YUMMY! They also looked more golden. Thanks for sharing!

  • i have made these before and they were pretty oily but i would love to try cooking things in an airfryer. that must be such a healthier way of eating this sort of stuff

  • These look great! I can never seem to get my breadcrumbs to adhere evenly, I will try using the oil!


    • I have the same problem. Mine usually look wonky, but at least the taste makes up for that.
