A yummy soup for the rainy weather!


Ingredients (serves 2)

  • 2 small nectarine
  • 1kg Pumpkin (diced)
  • 1 packet Onion Soup mix
  • 1 teaspoon Dried basil
  • Pepper to taste
  • 1 cup water

Method

  1. Dice nectarine and cook together with pumpkin in a big pot. Use only 1 cup of water or else the soup will become very thin...Make sure the heat is the lowest possible to avoid burning because the amount of water is only little.
  2. Simmer for 45 mins and add in onion soup mix. Remove from heat.
  3. Blend with a hand blender then add in basil and pepper.

Notes

This recipe can be used as baby food if you omit the onion soup packet as babies shouldn't be having too much sodium and MSG. Most onion soup packs out there has MSG and lot of sodium, unfortunately.
