I love to make this Pumpkin Bread every chance I get. It’s so easy to make and lovely to have a buttered slice with a cuppa!

Ingredients (makes 2 loaves)

  • 2 cups QLD blue pumpkin. peeled , boiled and mashed
  • 2 cups brown sugar
  • 1/2 cup olive oil
  • 2 1/2 cups Self raising flour
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts , roughly chopped


  1. Set oven to 180 deg. Grease 2 Date loaf tins well
  2. In a saucepan combine cooked pumpkin,sugar and oil .... Heat gently , do not boil
  3. remove from heat and add to other ingredients . Stir in well
  4. Pour batter in to 2 well greased date loaf tins, should each be about 3/4 full
  5. Bake 45- 55 minutes or until a skewer inserted comes out clean. Cool in tin Served sliced and spread with butter

Notes... 2 cups of cooked mashed pumpkin is roughly 4 cups of uncooked cubed pumpkin , just to give you an idea of how much to prepare. Serve with a spread of butter. Ive been making this for years and my girls love it!

  • Could you use butternut pumpkin? I have them growing in my garden and this would be so good to make!

    • Butternut pumpkin is a little more watery. But should be ok Let me know how you go !

    How did you get that cylinder shape? Is a date loaf tin different from a normal loaf tin?

    • The date loaf tin is a cylinder shape. You can use a soup tin if you haven’t got a date loaf tin

      • I have a wonderful selection of tins of all shapes and sizes.
        They can often been found for a good price/fraction of retail price at markets and at charity shops.

  • Queensland blue pumpkin is tge best for flavour. Looks yummy


  • 2 cups of sugar is far too much for my liking. I would ditch the sugar all together and use coconut palm syrup/brown rice syrup instead in a smaller amount (1/2 cup max), whilst reducing the oil.
    I like the circular shape !

    • It’s a treat .. a sometimes food … each to their own.. but I don’t think it’s that bad for 2 cakes
