Quiches are so easy to prepare. My family really enjoys them!


Ingredients (serves 4)

  • 250 g mascarpone cheese
  • 2 eggs
  • 375 g green beans
  • 1 sheet puff pastry
  • salt
  • Italian herbs

Method

  1. Boil the green beans for 15 minutes in a saucepan full of hot water.
  2. Preheat oven at 180 degrees.
  3. Line a baking dish with baking paper.
  4. Defrost one sheet of puff pastry.
  5. In a mixing bowl, mix mascarpone cheese and eggs. Add some salt and Italian herbs.
  6. Drain the beans and add to the mixing bowl.
  7. Use puff pastry to line base and sides of the baking dish.
  8. Pour the mix over the pastry.
  9. Bake for around 45 minutes.
  10. Serve with a green salad.

Notes

This recipe works well with asparagus too!

  • I love the green beans idea. However I think I would slice them for the benefit of those who may have difficulty biting through them.
    For those who like the flavour, fresh green beans are crunchy and tasty eaten raw.

  • I’ve never cooked with mascarpone cheese and always considered it a sweet option. I do love the look and sound of this recipe though, so might give it a try.
