This is a traditional South African Milk Tart recipe. It is called “Melktert” in Afrikaans. It is very popular and part of a “staple food diet” in South Africa! Milk Tart can be baked in the oven, but this is a very quick and easy adaption of the recipe which is not baked at all. It is made in the microwave and put straight into the fridge! The tart can be made in a tart dish (one big tart) or in individual patty pans. My 13 year old daughter loves baking and today is the last day of school – so she asked me if she could make little milk tarts for her whole class! This recipe is delicious and loved by all who taste it!


Ingredients (makes 35 in patty pan moulds)

  • 185g Marie or Nice Biscuits
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 90g Butter (melted)
  • 1 tin NESTLE Condensed Milk
  • 3 cups Warm Water
  • 15ml Margerine
  • 100ml Maizena/Cornflour
  • 75ml Cold Water
  • 1 teaspoon Vanilla Essence
  • 2 medium Eggs

Method

  1. Spray and cook/lightly grease your pie dish or patty pan trays. BASE: Combine biscuit crumbs (best to make the crumbs in a blender), cinnamon, nutmeg and butter in a bowl. Press into the base and sides of dish/patty pan. Refrigerate for one hour. Or you can make the base and refrigerate overnight.
  2. MILK FILLING: Mix the condensed milk, margarine, warm water and microwave for 3 minutes. Mix Cornflour, cold water, vanilla essence, eggs and salt separately. Combine this mixture with the one which was microwaved. Microwave ALLTOGETHER for an additional 5 minutes on high, mixing in-between (i.e. take out of microwave every one minute or minute and a half to stir). Slowly pour this mixture over the biscuit base.
  3. Crush a few left over biscuits with a rolling pin and sprinkle cinnamon and crumbs over the top. Let the mixture set in the fridge (few hours or overnight). ENJOY!
