Ingredients (serves 4)

  • 1 cup quinoa
  • 1 1/2 cups of water
  • 2 tablespoons extra virgin olive oil
  • 1 fresh lemon, squeezed
  • 1 tomato, finely chopped
  • 2 handfuls of fresh parsley, finely chopped
  • 1 handful of fresh mint, finely chopped
  • salt to taste
  • 1/3 cup currants
  • 1/3 cup cup of nuts that you like

Method

  1. Place the water and the quinoa in a pot and bring to a boil. Once boiling, cover with a lid and bring to a low simmer and cook until all the water has evaporated and the quinoa is cooked. Fluff with a fork and let cool completely. Once the quinoa is cooled add in the rest of the ingredients, stir well, season with salt and serve.

  • I love quinoa and usually have it in the pantry. If only the rabbits would stop eating all my parsley!

  • I buy this at coles.. will def do the recipe and save money


    • It always cost more at the shops and at home bigger quantities can be made which is a big bonus.

  • This is a great alternative to traditional tabouli, particularly as I’m gluten-intolerant. I love tabouli but when burghul is used it doesn’t love me :( This is wonderful.
