Ingredients (serves 6)
- 1 Beetroot
- 1 bag Spinach
- 100gm pine nuts
- 1 medium sweet potato (cut into cubes)
- 100gm fetta
Method
- Bake sweet potato and pine nuts in oven until cooked and crunchy and set aside.
- On a large plate, arrange spinach, sweet potato, beetroot, fetta and lastly pine nuts.
- Serve.
