A lovely side dish to serve with fish, chicken or beef.


Ingredients (serves 2)

  • 1 Eggplant
  • 1 Yellow Capsicum
  • 1 Zucchini
  • 1 Onion
  • 1 Tomato
  • 1 Tbs Olive Oil
  • 1 Tbs White Vinegar
  • 1 Tsp Mixed Herbs

Method

  1. Pre-heat Philips Airfyer to 200 degrees celsius or preheat oven to 200 degrees celsius (180 degrees fan forced).
  2. Cut vegetables into 2cm cubes.
  3. Put vegetables in bowl and coat with olive oil, vinegar and herbs.
  4. Cook in Philips Airfyer for 15 minutes - stirring vegetables halfway through cooking time. Roast in oven for 20 - 25 minutes.

  • I make this type of dish a lot, but never use vinegar. I do like to add fresh garlic, black pepper and Himalayan seasalt.
