Who can resist these traditional rock cakes …I love mine dunked in my cuppa or they are also simply delicious with a dollop of lemon butter.


Ingredients (serves 15)

  • 11/2cups (225g) self-raising flour
  • 1 teaspn baking powder
  • 115g unsalted butter
  • 115g sultanas
  • 75g caster sugar
  • grated zest of 1 lemon
  • 2 eggs

Method

  1. Preheat the oven to 200°C.
  2. Sift flour and baking powder into a large bowl, then rub in the butter until it resembles breadcrumbs. Stir in sugar and zest. Add eggs, stirring together, until you have a stiff dough.
  3. Place walnut-sized mounds of the mixture on a greased baking tray, leaving space for spreading between each one. Bake for 15-20 minutes until golden brown. Cool on a wire rack.

  • it’s been years since I have seen a rock cake in a cafe! – I always dreaded them as a kid for fear they would break my teeth!

  • I haven’t heard the term rock cake since my mum was alive! I thought they were only a thing in our house. I’ll have to try these in her honour although as a child I never liked them much – just picking out the glace cherries!

    A good rock cake was part of my growing up and not lets forget the good old corn flake cookie lol.
