Ingredients

  • 1 1/2 cups Self Raising flour
  • 1 1/4 cups Milk (can be skinny or full cream)
  • 1 egg
  • 3/4 cup cheese, grated
  • 3/4 cup corn kernels
  • 1 small-med carrot, grated
  • 1 small zucchini, grated
  • 1 spring onion, thinly sliced into rounds
  • salt & pepper to taste

Method

  1. Sift flour and salt into a good sized bowl
  2. Beat egg and add to milk. Add to flour and stir in well.
  3. Whisk until most if not all lumps have gone
  4. Add cheese, corn, carrot, zucchini and onion. Mix well.
  5. You may need to add extra milk, to thin out the batter a little..
  6. Spray frying pan lightly with bran oil (or whatever is your preference), place over a low heat on the stove top.
  7. Using a table spoon place dollops of mix in pan (allow enough room for the slide to be able to get under them and turn them over)
  8. When bubbles start to appear, turn over the pancake and heat until cooked through (only takes a couple of minutes)
